If you are going to cook for an extended period of time you may want to use more than one tray so you can have one ready when the wood in the first tray has quit smoking. Try the hickory chips (sold separately) for a different flavor profile when you reload the tray.

Instructions

Never touch your smoker tray once placed on the grill. Always use tongs to move your tray.Step 1Fill your smoker tray with dry Western Smoking Chips. Do not soak the chips.Step 2Place your smoker tray directly over the hottest burner until the chips begin to smoke. You may want to use a double layer of foil as a lid to allow chips to smolder slowly. If so. poke a few holes in the foil for smoke to escape.Step 3Once the chips are smoking. use tongs to move your tray to one side to make room for the food. Adjust the heat to desired temperature. Keep the grill closed for maximum flavor enhancement.
